Pigs have been at the centre of Chinese culture, cuisine and family life for thousands of years and are the country’s essential meat. The character for “family” is a pig under a roof. Also, the pig is one of the 12 signs of the Chinese zodiac symbolizing diligence and generosity. They signify prosperity, fertility and virility. Poems, stories and songs celebrate them. Nonetheless, pork was peripheral in the Chinese diet until very recently. It used to largely consist of grains until the economy opened up in the 1970s.
